This dish is something I often eat as an appetizer at Japanese restaurants and it always leaves me craving more! So I decided to make it at home, where I can have as much as I want without feeling guilty asking the waiter for more refills.

This dish is called sunomono, which has a nice and light vinegary smell to it, with great crunch from the Persian or Japanese cucumbers. It’s a super simple salad to make that you can just throw together right before a meal.

I keep everything for this recipe stocked in the pantry, so all I have to do is find some cucumbers and I’m good to go!

Types of cucumbers

The regular large cucumbers you’ll find at most supermarkets just won’t work for this recipe–don’t do it! Those cukes are too large, the skin is too thick, they’re loaded with seeds, and they’re not crunchy.

I can’t even bother with those cucumbers anymore after trying these smaller, crunchier varieties.

You want to go for Japanese cucumbers to do it right, otherwise Persian cucumbers do the trick too. These varieties are crunchier, and have a thin skin you can just leave on. You won’t even need to remove the seeds, since they’re pretty much non-existant.

I find Japanese cucumbers at my local Japanese markets, otherwise Trader Joe’s works for the Persian variety.

Lots of American supermarkets have started to carry these in the last few years too, sometimes referred to as hot house cucumbers. To be honest I’m not sure if it’s a different variety or what, but they taste very similar and work great too.

How to slice cucumbers quickly

If you have a mandolin slicer with some cut-proof gloves you can make quick work of slicing these up. However, doing it by hand works just fine too.

Top with toasted sesame seeds and serve! Make a double batch and save a second batch roslyn savings bank east meadow the next day’s meal! Easy Cucumber Salad

Cucumbers are one of those staple vegetables you can always find in my fridge. They are great for snacking, they make the best salads, and they’re a delicious topping for wraps and sandwiches (check out my links below for more ideas).

Here they become the star of the show as the main ingredient in this easy and healthy cucumber salad! It’s a summer must have recipe for cookouts and simple dinners, or for lunch skip the pickles and try it atop of a sandwich (it’s so good on a tuna sandwich).

Serve it up with hearty, stacked Turkey Burger, juicy chilled watermelon, Grilled Corn on the Cob and this Cucumber Salad! This is how we welcome summer.

  • English cucumbers – no peeling required!
  • Salt and freshly ground black pepper – the salt helps draw the excess moisture from the cucumbers so the salad isn’t wet. So keep in mind too a lot of it will get drained and dabbed off, add more if needed at the end.
  • Apple cider vinegar – this gives it that tangy kick.
  • Olive oil – this helps balance out the acidic flavors of the vinegar.
  • Mayonnaise – only 1 Tbsp is used to add a hint of creaminess to the dressing.
  • Honey – a hint of this keeps the vinegar from being overwhelming.
  • Freshparsley and dill – if you don’t want to buy both you can just use one or the other.
  • Fresh garlic – key to a delicious dressing.
  • Red onion – be sure to rinse the onion first to remove excess harsh flavor.

How to Make Cucumber Salad

  • Salt and drain cucumbers: place sliced cucumbers in a colander.
  • Sprinkle with salt and toss to evenly coat, while separating slices so salt coats all cucumbers.
  • Transfer colander to refrigerator set over a plate to allow cucumbers to drain 30 – 60 minutes.

  • Make dressing: meanwhile in a mixing bowl whisk together apple cider vinegar, olive oil, mayonnaise, honey, parsley, dill, garlic, and pepper until emulsified (well blended).
  • Chill until ready to use.
  • Rinse red onions: place red onion in a fine mesh sieve, rinse under cool water and drain.

  • Dry cucumbers: spread cucumbers over a double layer of paper towels.
  • Top with another layer of paper towels then roll paper towels up (with cucumbers inside) and press to remove excess liquid

Toss everything together: transfer cucumbers and red onion to a large bowl. Whisk dressing again until emulsified then pour over cucumbers. Toss to coat well. Serve within one hour.

What’s the Best Type of Cucumber to Use for Cucumber Salad?

I like to use English cucumbers (hot house cucumbers) here because they consistently seem to have the best flavor. No bitter seeds and no peeling required! Those mini Persian cucumbers are another great option.

Garden (American) or Kirby cucumbers will work here too, just peel before using, then cut cucumbers in half through the length and scoop out the seeds.

What Type of Vinegar Can I Use for Cucumber Salad?

I usually opt for the apple cider vinegar but based on what you have any of these will work great:

  • Apple cider vinegar
  • Rice vinegar
  • White vinegar
  • White or dark balsamic vinegar

Can I Halve the Recipe?

Only have one cucumber and smaller group to feed? These recipe will halve easily and I recommend only make what you’ll need because it doesn’t store very well.

How Far in Advance Can Cucumber Salad be Made?

For best results I recommend serving cucumber salad within an hour of adding the dressing. The cucumbers will start to break down and get watery and they won’t be as crisp.

Today’s recipe is a picnic-perfect pasta salad! Every cookout needs a great pasta salad, and this is the one that I’ll be making all summer long. It comes together in no time, it’s full of fresh ingredients, and it packs a flavorful punch.

I took extra care to make sure that all of this week’s recipes are not just easy, but also easy to make in advance… because I totally get that you don’t want to be futzing with your salad when you could be spending time outside with your friends.

Note: if you do decide to make this in advance, toss on some whole basil leaves before serving to make your salad instantly prettier.

I’ve made many pasta salads before (see here and here), but I realized that I didn’t have a really good classic pasta salad with a vinaigrette dressing on the site. This recipe is easy and fresh – along with the pasta, I toss in juicy cherry tomatoes, tangy feta cheese, a generous handful of arugula, chickpeas for protein, pine nuts & little cucumbers for crunch, and lots of fresh parsley and basil.

The dressing is easy to make: it’s a zesty mix of olive oil, lemon, garlic, Dijon, herbs & seasonings  – I like to use herbes de Provence but Italian seasoning would be equally good in its place.

How to Make Pasta Salad

Making this recipe is a breeze! Just follow these simple steps:

  1. Cook your pasta in a large pot of salted boiling water. Drain it, toss it with some olive oil, and set it aside to cool.
  2. Chop your cherry tomatoes and cucumbers, mince the parsley, and crumble the feta.
  3. Whisk together the dressing ingredients.
  4. And toss everything together in a big bowl! Season to taste and dig in.

How to make pasta salad

My Best Pasta Salad Tips

  • Cook your pasta a little longer than normal. It should be just a tad past al dente (but not mushy) so that the pasta stays soft when it cools. I find that the higher time range listed on box instructions is usually just about right for pasta salad.
  • Let your pasta cool completely before tossing it with the other ingredients. If it’s still warm, the hot pasta will start to cook and wilt the veggies. No one’s a fan of warm cucumber, so make sure you’re tossing cold pasta into this dish.
  • Save some herbs for garnish! This pasta salad recipe is a great one to make ahead, but if you do, save some of the herbs and pine nuts for garnish. The pine nuts will keep their crunchy texture and the herbs will be extra fresh, pretty, and flavorful.
  • Taste and adjust. Like most salad recipes, this one is super flexible, so be sure to taste and adjust it to your liking before serving. Add more lemon if you prefer a tangier salad, toss in more greens if you’re all about the veggies, and always, always salt to taste.

This pasta salad is fantastic as-is, but feel free to change it up to match your tastes or the ingredients in your pantry. Here are a few suggestions:

  • Make it vegan! Use olives or sun dried tomatoes in place of the feta.
  • Make it gluten-free! Use gluten-free pasta or quinoa in place of traditional noodles.
  • Go Greek. To make this recipe more of a Greek pasta salad, add kalamata or black olives and a half cup of thinly sliced red onion.
  • Try a caprese combo. Use halved mini mozzarella balls in place of the feta.
  • Try another herb. Fresh oregano would be lovely in place of the mint in this salad, and thyme would also be a great addition.
  • Swap out the arugula for spinach, or leave it out altogether if you prefer a higher pasta: veggie ratio.
  • Or roast your chickpeas for extra crunch.

  • 3 cups uncooked fusilli pasta
  • 2 heaping cups halved cherry tomatoes
  • 1 ½ cups cooked chickpeas, drained and rinsed
  • 2 cups arugula
  • 1 cup Persian cucumbers, sliced into thin half moons
  • 1 cup crumbled feta cheese
  • 1 cup basil leaves, torn
  • ½ cup minced parsley
  • ½ cup chopped mint
  • ¼ cup toasted pine nuts

Dressing

  • ¼ cup extra-virgin olive oil, more for drizzling
  • 3 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 3 garlic cloves, minced
  • 1 teaspoon herbes de Provence, or dried Italian seasoning
  • ¼ teaspoon red pepper flakes
  • ¾ teaspoon sea salt
  • Bring a large pot of salted water to a boil. Prepare the pasta according to the package directions, or until slightly past al dente.

  • Meanwhile, make the dressing. In a small bowl, whisk together the olive oil, lemon juice, mustard, garlic, herbes de Provence, red pepper flakes, and salt. (Note: the dressing will have a strong flavor, it’ll mellow once it coats all of the pasta salad ingredients).

  • Drain the pasta, toss it with a little olive oil (so that it doesn’t stick together) and let it cool to room temp. Transfer to a large bowl with the tomatoes, chickpeas, arugula, cucumbers, feta cheese, basil, parsley, mint, and pine nuts. Pour the dressing and toss to coat. Season to taste with more lemon, salt, pepper, and/or a drizzle of olive oil, if desired, and serve.
